Grandad's grilled cheese, still a work in progress.
Before there was a roaster, there was Grandad's rule for grilled cheese: butter to the edges, low heat, don't rush it. Calvin learned it standing on a stool at the stovetop, and it's the same method behind every hotto sando that comes off this counter.
We're not calling it finished. Grandad tinkered with it for decades, and we're still tinkering — cheese, bread, the sear. Reckon we got it wrong? Tell us at the counter. That's the whole method: it only gets better if people are honest with us about it.
